A Classic Prawn Cocktail matched with Waipara Hills Marlborogh Cuvee

Ingredients
12 cooked, peeled and de-veined prawns, where possible from a sustainable source
1 avocado
8 Cherry tomatoes, cut in ¼’s
½ an ice berg lettuce, washed and cut into fine shreds (chiffonnade)
Juice of 1 lemon

For the Marie Rose sauce
½ cup best quality whole egg mayonnaise
1 tbsp Tomato sauce
2 tsp Brandy
Tabasco and lemon juice to taste
