“I’ve worked my way up the viticulture ladder, doing paper after paper, and I know that vine balance is the key to consistency. You’ve got to plan ahead – to next harvest and the one after that.

On one hand you’re working with the winemakers to produce fruit with a spectrum of flavours. On the other hand you have to think about the long term health of the vines – nurturing the vine to ensure consistent quality.

My philosophy is pretty simple - quality grapes make quality wine. We do whatever we can to ensure that what pours into the glass represents the best we can do.”
