Our 2009 Waipara Hills Central Otago Pinot Noir was recently featured as as a wine match for Salmon fillets with grapes and baked polenta.

The recipe was created by David Waddington, from Silk's Brasserie in the NSW village of Leura, and is "great with the bright and smoky 2009 Waipara Hills Pinot Noir"

We held a special winemakers dinner at Martin Bosley’s restaurant in Wellington on the 16th February 2011 for key Foodstuffs Wellington customers. Waipara Hills wines were superbly matched to ‘A Theme Around Minerality’ with most attendees in agreement that the Vadouvan Crumbed Sweetbread, Edamame, Fermented Black Beans, Cinnamon-Carrot Puree with Foamy Apple Juice matched with the 2010 Waipara Hills Waipara Riesling was the pick of the night.

Ingredients
12 cooked, peeled and de-veined prawns, where possible from a sustainable source
1 avocado
8 Cherry tomatoes, cut in ¼’s
½ an ice berg lettuce, washed and cut into fine shred (chiffonnade)
Juice of 1 lemon
